Ingredients
7-8 cups seedless watermelon, cut into 3/4 inch cubes
1 1/2 cups fresh blueberries
1 cup feta cheese, freshly crumbled
1 handful fresh mint leaves, thinly sliced
1 handful fresh basil leaves, thinly sliced
1 1/2 tablespoons fresh lime juice
1 tablespoon extra virgin olive oil
1-2 tablespoons honey
Pinch of sea salt
Instructions
In a clean mason jar, combine the fresh lime juice, olive oil, honey, and a pinch of salt.
Seal the jar tightly and shake vigorously for 30 seconds until the honey is fully dissolved and the dressing is emulsified.
Place the prepared watermelon cubes into a large, wide serving bowl.
Add the fresh blueberries, sliced mint, and sliced basil over the melon.
Sprinkle three-quarters of the crumbled feta evenly over the fruit mixture.
Drizzle the prepared dressing over the salad and toss gently to coat.
Top with the remaining feta cheese before serving immediately.
