Ingredients
0.5 cup shortening
1 cup granulated sugar
3 large eggs
2 tsp pure vanilla extract
0.5 cup hot water
2 cups all-purpose flour
0.5 tsp salt
1 tsp baking soda
0.5 tsp baking powder
1 cup shortening for frosting
4 cups powdered sugar
8 oz cream cheese, softened
Instructions
Preheat your oven to 425 degrees Fahrenheit and line a baking sheet with parchment paper.
In a large bowl, cream together 0.5 cup shortening, granulated sugar, eggs, and vanilla extract until the mixture is light and fluffy.
In a separate bowl, whisk together the flour, salt, baking soda, and baking powder.
Gradually add the dry ingredients to the wet mixture, alternating with the hot water, mixing until well combined.
Drop rounded tablespoons of batter onto the prepared baking sheet, spacing them about 2 inches apart.
Bake for 7 minutes or until the cakes spring back when lightly touched.
Allow the cakes to cool completely on a wire rack.
While cooling, prepare the frosting by beating 1 cup of shortening with cream cheese and powdered sugar until smooth and creamy.
Pipe or spread the filling onto the flat side of half the cooled cakes and top with the remaining halves to form sandwiches.
Notes
Butter can be used in place of shortening for a richer flavor profile. Ensure eggs are at room temperature for the best emulsification. Sifting the powdered sugar is crucial for achieving a smooth, lump-free frosting.
