Ingredients
2 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup (2 sticks) unsalted butter, softened
1 cup granulated sugar
2 teaspoons vanilla extract
3/4 cup cream cheese, softened
1/4 cup unsalted butter, softened
1 1/2 cups powdered sugar
1/2 teaspoon vanilla extract
Fresh fruit for topping (strawberries, blueberries, kiwi, oranges, raspberries, etc.)
Instructions
Preheat oven to 350°F (175°C)
In a bowl, whisk flour, baking powder, and salt
In another bowl, cream butter and sugar until light and fluffy
Add vanilla and mix until combined
Gradually blend into dry ingredients
Form into a disk, wrap in plastic, and refrigerate 30 minutes
Roll dough 1/4″ thick and cut into 3″ circles
Bake 8-10 minutes until lightly golden
Cool completely on a wire rack
In a bowl, beat cream cheese and butter until smooth
Gradually add powdered sugar and vanilla; mix until fluffy
Spread frosting evenly on cooled cookies
Top with fresh fruit slices arranged in vibrant patterns
Notes
Fruits work best when cut just before assembly
Store in an airtight container in refrigerator up to 2 days
For a nut-free version, ensure equipment used for baking is also nut-free
