Ingredients
1 lb halal-friendly chorizo sausage (beef or turkey-based)
6 large eggs
1 cup uncooked white rice, drained
1 cup canned pinto beans, rinsed
1 red bell pepper, diced
4 whole wheat tortillas
1 avocado, sliced
3 scallions, chopped
1/2 lime, juiced
1/4 cup cilantro, chopped
1/2 teaspoon salt
Instructions
Preheat skillet for chorizo. Add chorizo and cook until crispy (5-7 minutes).
Cook rice in boiling water (15-20 minutes).
Sauté diced bell pepper until softened (3-5 minutes).
Scramble eggs in a separate pan with salt, until cooked.
Warm tortillas briefly in a dry skillet.
Assemble bowls with rice, chorizo, beans, bell peppers, scrambled eggs, and warm tortillas on the side.
Top with avocado, lime juice, scallions, cilantro, and additional salt.
Notes
Use a lean halal-resistant chorizo variety for lower fat.
