Ingredients
1 pound ground turkey
1 cup onion, finely diced
1 tsp cumin
1 tsp salt
3/4 tsp chili powder
1/2 tsp black pepper
1/2 tsp garlic powder
1/4 tsp cayenne pepper
4 oz canned diced green chilies (undrained)
28 oz crushed tomatoes
15 oz canned beans (black, pinto, or kidney), rinsed
15 oz canned or frozen corn
1 cup low-sodium chicken stock
Instructions
Place a large pot or Dutch oven over medium-high heat and add the ground turkey.
Break the meat into small crumbles using a wooden spoon and cook until browned.
Add the diced onions and continue cooking until the turkey is fully browned and the onions are translucent.
Drain any excess fat from the pot.
Stir in the cumin, salt, chili powder, black pepper, garlic powder, and cayenne pepper, coating the meat thoroughly.
Pour in the diced green chilies, crushed tomatoes, beans, corn, and chicken stock.
Bring the mixture to a simmer, then reduce heat to low and let cook for 15-20 minutes to allow flavors to meld.
Serve hot with your favorite toppings.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days. This chili is freezer-friendly and can be stored in freezer-safe bags for up to 3 months. You can substitute ground chicken for the turkey if preferred.
