Ingredients
3/4 cup mayonnaise
2 Tbsp lemon juice
1/4 tsp dried dill
3/4 tsp salt
1/4 tsp black pepper
1/2 cup red onion, finely diced
1 cup frozen peas
12 oz mini shell pasta
2 cans (5 oz each) chunk light tuna, well drained
Instructions
In a small bowl, whisk together the mayonnaise, lemon juice, dried dill, salt, and pepper until smooth and set aside.
Bring a large pot of salted water to a boil and cook the mini shell pasta according to package directions until al dente.
During the last 2 minutes of boiling the pasta, add the frozen peas to the water.
Drain the pasta and peas well using a colander and rinse under cool water to stop the cooking.
In a large mixing bowl, combine the cooked pasta, peas, finely diced red onion, and the well-drained tuna.
Pour the dressing over the ingredients and toss gently until everything is evenly coated.
Serve immediately or cover and refrigerate for at least one hour to allow flavors to meld.
Notes
Substitute rotini pasta if mini shells are not available. Fresh dill can be used in place of dried for a brighter flavor. Store in an airtight container in the refrigerator for up to 3 days.
