Ingredients

1.25 pounds tomatillos, husks removed and rinsed
1 small white onion
0.75 cup fresh cilantro leaves and stems
2 whole limes, freshly juiced
2 jalapeno peppers, seeded
1 teaspoon kosher salt


Instructions

Remove husks from tomatillos and rinse thoroughly to remove sticky residue.
Bring a large pot of water to a boil and cook tomatillos for 5 minutes until they turn a dull olive green.
