Ingredients
1 cup (2 sticks) unsalted butter, softened
1 cup creamy peanut butter
1 cup brown sugar, packed
1 large egg
1 teaspoon vanillin extract
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon sea salt
Instructions
Preheat the oven to 350°F (180°C) and line baking sheets with parchment paper.
In a large mixing bowl, cream together the softened butter and brown sugar until light and fluffy.
Mix in peanut butter, ensuring a smooth consistency.
Add the egg and vanillin extract, and blend well.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture until just combined.
Using a cookie scoop or tablespoon, drop dough onto the prepared baking sheets, spacing them 2 inches apart.
Use the back of a spoon or a fork to create a crisscross pattern on top of each cookie.
Bake for 10-12 minutes, or until the edges are lightly golden.
Allow the cookies to cool slightly on the baking sheets before transferring to a wire rack to cool completely.
