Ingredients
1 pre-made 9-inch pie crust
4-5 large Roma or beefsteak tomatoes
1/2 teaspoon salt
1/4 cup fresh basil leaves, finely chopped
2 garlic cloves, minced
1 cup grated mozzarella cheese
1 cup grated sharp cheddar cheese
3/4 cup mayonnaise
1 teaspoon ground black pepper
1/2 cup butter cracker crumbs
Instructions
Preheat your oven to 350°F (175°C).
Place the pie crust into a 9-inch dish, line with parchment paper and weights/beans, and bake for 20 minutes; remove weights and cool.
Slice the tomatoes, lay on paper towels, sprinkle with salt, and rest for 10 minutes; pat thoroughly dry.
Layer the tomatoes and basil inside the cooled crust, reserving a few slices for the top.
In a bowl, mix mozzarella, cheddar, mayonnaise, garlic, and black pepper until combined.
Spread the cheese mixture over the tomatoes.
Sprinkle the butter cracker crumbs over the top.
