Description
A moist, spiced zucchini bread filled with cinnamon, nutmeg, and a hint of sweetness. Easy to make and perfect with breakfast, snacks, or dessert.
Ingredients
2 cups all-purpose flour
1 cup granulated sugar
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon kosher salt
1½ teaspoons ground cinnamon
¾ teaspoon ground nutmeg
¼ teaspoon ground cardamom
2 large eggs
½ cup vegetable oil
1¼ teaspoons vanilla extract
2 cups grated zucchini
Instructions
Preheat oven to 350°F (175°C) and grease a 9×5-inch loaf pan
In a large bowl, whisk flour, sugar, baking soda, baking powder, salt, cinnamon, nutmeg, and cardamom
In another bowl, mix eggs, oil, and vanilla extract
Stir wet ingredients into dry ingredients
Fold in grated zucchini
Pour batter into prepared loaf pan
Bake for 60-80 minutes until toothpick inserted in center comes out clean
Cool completely before slicing
Notes
Grate and dry zucchini thoroughly to avoid a gummy texture
Substitute vegetable oil for butter if using
Freeze leftovers in an airtight container up to 3 months
Optional: add chopped walnuts or chocolate chips
