Ingredients
4 cups strawberries, halved
4 cups chopped rhubarb
3/4 cup cane sugar
2 tablespoons cornstarch
1 tablespoon fresh lemon juice
Instructions
Chop rhubarb into 1/2-inch pieces
Combine sugars, cornstarch, and lemon juice in a pot
Add strawberries and rhubarb, stirring until coated
Simmer over medium heat for 10 minutes until thickened
Cool before using in pie crust or serving fresh
Notes
Adjust sugar based on fruit ripeness
Frozen rhubarb (drained) works well out of season Use as topping for yogurt, ice cream, or pancakes
