6 cups fresh peaches, peeled and sliced
1/3 cup granulated sugar
1 large lemon, zested
2 tbsp brown sugar, packed
1 tbsp cornstarch
1 tsp ground cinnamon
2 cups all-purpose flour
1/3 cup granulated sugar
2 tsp baking powder
1/2 tsp kosher salt
1/2 cup unsalted butter, chilled
1 cup buttermilk, cold
1 tsp vanilla extract
Heavy cream, as needed for brushing
Turbinado sugar, as needed for topping


Instructions

Preheat your oven to 375 degrees F.
In a large bowl, combine sliced peaches, 1/3 cup granulated sugar, and lemon zest, rubbing together with fingers to release oils.
Add brown sugar, cornstarch, and cinnamon to the peaches and toss until well coated; set aside.
In a separate bowl, whisk together flour, 1/3 cup sugar, baking powder, and salt.
