Ingredients
2 lbs Chuck Roast, cut into 1-inch cubes
2 tbsp Vegetable oil
1 large Onion, finely chopped
3 cloves Garlic, minced
4 cups Beef broth, low sodium
2 tbsp Worcestershire sauce
1 tsp Dried thyme
2 Bay leaves
3 tbsp Cornstarch
3 tbsp Water
12 oz Wide egg noodles
Fresh parsley for garnish
Instructions
Season beef cubes with salt and pepper.
Heat oil in a large pot or Dutch oven over medium-high heat and sear beef in batches until browned; remove and set aside.
Sauté onions in the same pot until translucent, then add garlic and cook for 1 minute.
Deglaze the pot with a splash of broth, scraping up brown bits.
Return beef to the pot, add remaining broth, Worcestershire sauce, thyme, and bay leaves.
Simmer on low heat for about 2 hours until the beef is fork-tender.
Remove bay leaves and stir in the cornstarch slurry (cornstarch mixed with water) to thicken the gravy.
Cook the egg noodles in a separate pot of boiling salted water according to package directions.
Serve the savory beef and gravy over the noodles and garnish with fresh parsley.
