Ingredients

1 pound lean ground beef
1/2 cup yellow onion, diced
1/2 cup red bell pepper, diced
2 cloves garlic, minced
2 teaspoons chili powder
1 teaspoon cumin
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
1/4 teaspoon garlic powder
1/4 teaspoon oregano
1/8 teaspoon red pepper flakes
3 cups sweet potatoes, peeled and cut into 1/2 inch cubes
1 can (15 oz) black beans, drained and rinsed
1 cup water
1 cup shredded cheese (optional)


Instructions

In a large skillet over medium-high heat, brown the ground beef until cooked through.
Add the onion and red bell pepper to the skillet, sautéing until softened, about 3-5 minutes.
Stir in the minced garlic, chili powder, cumin, salt, pepper, garlic powder, oregano, and red pepper flakes, cooking for 1 minute until fragrant.
Add the cubed sweet potatoes and the cup of water to the skillet.
Cover and simmer for about 12-15 minutes, or until the potatoes are tender and most of the water has evaporated.
Stir in the drained black beans and cook for another 2-3 minutes to heat through.
If desired, top with shredded cheese and cover for 1 minute to melt before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days.
For extra heat, add fresh jalapeños or extra red pepper flakes.
You can substitute the ground beef with ground turkey for a leaner alternative.
