Ingredients
1 lb lean ground beef
2 medium sweet potatoes, peeled and cut into 0.5-inch cubes
1 medium yellow onion, diced
3 cloves garlic, minced
1 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
0.5 tsp chili powder
1 cup beef broth
Salt and black pepper to taste
Instructions
Heat olive oil in a large skillet over medium-high heat.
Add the onion and sauté until translucent, about 3 to 4 minutes.
Stir in the minced garlic and cook for 30 seconds until fragrant.
Add the ground beef to the skillet and cook until browned, breaking it apart with a wooden spoon for 5 to 7 minutes.
Stir in the cumin, paprika, chili powder, salt, and pepper.
Add the cubed sweet potatoes to the skillet and stir to combine.
Pour in the beef broth to help the potatoes steam.
Cover the skillet and simmer for 15 minutes, or until the potatoes are tender and the liquid has mostly evaporated.
Remove the lid and cook for an additional 2 to 3 minutes if needed to reach desired consistency.
