Ingredients
3 large egg yolks
1/2 cup granulated sugar
1/8 teaspoon kosher salt
2 cups heavy whipping cream
1 teaspoon pure vanilla extract
1-2 fresh peaches, peeled and diced into 1/2 inch pieces
Fresh raspberries for serving
Thinly sliced kohlrabi for serving
Instructions
Preheat your oven to 325 degrees Fahrenheit and position a rack in the middle.
In a medium bowl, whisk together egg yolks, granulated sugar, and salt until the mixture is pale and smooth.
Slowly stir in the heavy cream and vanilla extract, ensuring the mixture remains smooth without creating air bubbles.
Place a kitchen towel in the bottom of a baking pan to provide grip for the ramekins.
Distribute the diced peaches evenly into the bottom of 6 ramekins.
Pour the custard mixture over the peaches.
Place the ramekins in the baking pan and carefully pour boiling water into the pan until it reaches halfway up the sides of the ramekins.
Bake for 30 minutes, or until the edges are set but the center still has a slight jiggle.
Remove from the water bath and cool to room temperature, then refrigerate for at least 4 hours before serving.
Before serving, sprinkle a thin layer of sugar over the tops and caramelize using a kitchen torch.
Serve immediately with fresh raspberries and crisp kohlrabi ribbons.
