Ingredients
All-purpose flour 2 cups
Granulated sugar 1 cup
Baking powder 1 tsp
Salt 1/4 tsp
Large eggs 2
Vanilla extract 1 tsp
Milk 1/2 cup
Cream cheese 8 oz, softened
Powdered sugar 1/4 cup
Heavy cream 2 oz
Fresh strawberries 1 cup, sliced
Granulated sugar (macerating) 2 tbsp
Instructions
Preheat oven to 350°F (180°C)
Line a jelly roll pan with parchment paper
Whisk flour, 3/4 cup granulated sugar, baking powder, and salt in a bowl
In another bowl, beat eggs and vanilla until thick
Mix wet and dry ingredients alternately, adding milk
Spread batter evenly on the prepared pan and bake for 12-14 minutes
Let cake cool completely
In a mixer, combine cream cheese, powdered sugar, heavy cream, and 1/4 tsp salt until smooth
Spread filling over cooled cake, leaving a 1-inch border
Arrange strawberry slices on one half and roll tightly into a log
Chill for 1 hour before slicing
Notes
Chill until ready to serve and the filling firms up
Use high-quality halal-certified cream cheese if available
Store leftovers in an airtight container in the fridge
