Description

These sweet-tart Strawberry Lemonade Bars are the perfect summer treat, bursting with the bright flavors of fresh strawberries and zesty lemon. Light, easy to make, and kid-approved, they bring a cheerful burst of flavor and sunshine to any occasion.


Ingredients

1 cup unsalted butter, softened
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
3 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 cups strawberries, mashed (about 10 medium strawberries)
1/4 cup fresh lemon juice
Zest of 1 lemon


Instructions

Preheat oven to 350°F (175°C). Grease and flour an 13×9-inch baking pan.
In a large bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In another bowl, whisk together the flour, baking soda, and salt.
Gradually add the flour mixture to the butter mixture, mixing until just combined.
Press half of the dough into the bottom of the prepared pan to form the crust.
In a separate small bowl, mash the strawberries and stir in the fresh lemon juice and lemon zest to make the strawberry mixture.
Drop spoonfuls of the strawberry mixture randomly over the crust, pushing some into the dough and leaving some as swirls on top.
Sprinkle the remaining dough over the top, gently pressing it down to cover the strawberry mixture.
Bake for 30 to 35 minutes, or until the top is golden and the center is just set.
Allow to cool completely in the pan before slicing into 12-16 bars.

Notes

For best results, use very fresh strawberries and freshly squeezed lemon juice for maximum flavor.
Store leftover bars in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days.
These bars can also be frozen for up to 2 months for longer storage.
