Ingredients

12 ounces top sirloin steak, sliced against the grain
3 tbsp reduced sodium soy sauce, divided
2 tbsp canola or avocado oil, divided
1 tbsp cornstarch
3 tbsp oyster sauce
1 tbsp sesame oil
1/4 tsp ground black pepper
10-12 oz frozen peas and carrots, thawed
1 tbsp minced garlic
1 tbsp minced fresh ginger
1 tbsp unsalted butter
3 1/2 cups leftover cold rice
1 bunch green onions, thinly sliced
3 large eggs, lightly beaten


Instructions

Slice the steak against the grain into thin, bite-sized strips.
In a bowl, whisk together 1 tbsp soy sauce, 1 tbsp canola oil, and cornstarch. Add the beef, toss to coat, and let marinate for 10 minutes.
Heat 1 tbsp oil in a large skillet or wok over high heat; sear the beef until browned, then remove from the pan.
In the same pan, add the peas, carrots, garlic, and ginger; stir-fry for 2-3 minutes.
Push vegetables to the side, add eggs to the center, and scramble until set.
Add the cold rice and remaining soy sauce, stirring to combine and break up clumps.
Stir in the oyster sauce, sesame oil, black pepper, and butter, tossing until the rice is heated through.
Fold the seasoned beef back into the skillet.
Top with sliced green onions and serve immediately.

Notes

Using cold, day-old rice is the secret to getting perfect texture without mushiness. If you do not have leftover rice, spread fresh cooked rice on a baking sheet and refrigerate uncovered for an hour. Hoisin sauce is an acceptable substitute for oyster sauce if you prefer a sweeter profile.
