Ingredients

1.5 lbs boneless, skinless chicken thighs
1 cup all-purpose flour
1 tsp garlic powder
1 tsp paprika
1 tsp salt
0.5 tsp black pepper
0.5 cup vegetable oil (for frying)
1/2 cup soy sauce (low sodium, if possible)
1/4 cup honey
2 jalapeños, finely chopped
1 tbsp apple cider vinegar
1 tbsp sesame seeds (optional for garnish)


Instructions

Pat the chicken thighs dry and cut them into bite-sized pieces.
In a bowl, mix flour, garlic powder, paprika, salt, and black pepper.
Dredge chicken in the flour mixture until fully coated.
Heat the vegetable oil in a large skillet over medium-high heat (or a deep fryer set to 375°F / 190°C).
Fry the chicken until golden and crispy, about 4–5 minutes per side. Drain on paper towels.
In a small saucepan, combine soy sauce, honey, jalapeños, and apple cider vinegar. Bring to a gentle simmer over medium heat for 5–7 minutes, stirring occasionally. The glaze should thicken slightly.
Brush or spoon the glaze over the hot fried chicken pieces while still in the skillet, ensuring even coverage.
Garnish with sesame seeds, if desired. Serve warm and enjoy!

Notes

For a lighter version, you can bake the chicken at 400°F (200°C) for about 20 minutes, flipping halfway through, instead of frying.
Adjust the amount of jalapeños or honey to suit your spice or sweetness preference.
Leftovers can be stored in an airtight container for up to 3 days and reheated in the oven or skillet for best texture.
