Description

Indulge in this warm and comforting spiced pumpkin bread, perfect for chilly autumn days. With its moist, tender crumb and a sophisticated blend of cinnamon, ginger, nutmeg, and black pepper, it offers a sophisticated depth of flavor. This easy-to-make loaf uses simple pantry staples and features chewy golden raisins for added texture, making it an ideal choice for breakfast or a cozy afternoon treat.

Ingredients

1 1/2 cups pure pumpkin puree
2 large eggs
1/2 cup canola oil
1 cup brown sugar, packed firmly
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/2 tsp kosher salt
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp black pepper
1/4 tsp fresh grated nutmeg
1/2 cup golden raisins

Instructions

Preheat oven to 350 degrees F and grease or line a 9×5 inch loaf pan.
Whisk together the pumpkin puree, eggs, oil, brown sugar, and vanilla extract in a large bowl.
In a separate medium bowl, mix the flour, baking soda, salt, cinnamon, ginger, black pepper, and nutmeg.
Combine the dry ingredients into the wet mixture, stirring until just moistened.
Gently fold in the golden raisins.
Pour the batter into the prepared pan.
Bake for 50 to 60 minutes until a toothpick inserted into the center comes out clean.
Allow to cool before slicing.

Notes

You can substitute melted coconut oil for canola oil. This bread is freezer-friendly; slice before freezing for easy grab-and-go portions. For the best flavor, use fresh grated nutmeg.
