Ingredients
3 cups cooked rotisserie chicken, shredded
1 cup dried sweetened cranberries
2/3 cup celery, finely diced
1/2 cup sliced almonds, toasted
3/4 cup mayonnaise
1 tablespoon apple cider vinegar
2 teaspoons sugar
1 teaspoon lemon juice
1/4 teaspoon ground mustard
1/4 teaspoon onion powder
Kosher salt and black pepper to taste
Instructions
In a large mixing bowl, combine the shredded chicken, dried cranberries, diced celery, and toasted almonds.
In a separate small bowl, whisk together the mayonnaise, apple cider vinegar, sugar, lemon juice, ground mustard, and onion powder.
Pour the dressing over the chicken mixture and stir until everything is evenly coated.
