Ingredients

300g Active Sourdough Starter
50g Sugar (or Honey)
650g Warm Water (105-115°F)
1000g Unbleached All-Purpose Flour
25g Fine Sea Salt
40g Avocado or Extra Virgin Olive Oil


Instructions

Combine active sourdough starter, sugar, and warm water in a large bowl and mix until dissolved.
Add flour and salt to the bowl, mixing with a wooden spoon or hand.
Pour in the oil and mix until a shaggy, cohesive mass forms.
Cover the bowl with oiled plastic wrap and rest at room temperature for 45 minutes.
Perform a series of stretch and folds by pinching the dough, pulling it upward, and folding it over itself.
Cover and allow to rise until doubled in size.
Shape into two loaves and place in greased pans.
Bake at 375°F for approximately 40 minutes until golden brown.

Notes

Ensure your sourdough starter is bubbly and active before beginning. Honey makes a wonderful substitute for sugar for a deeper flavor. Store at room temperature in a bread bag for up to 3 days or freeze for longer storage.
