Ingredients
2 1/8 cups all-purpose flour
3/4 teaspoon salt
1/2 teaspoon baking soda
1/2 cup unsalted butter, softened
1/2 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 large egg
1/2 teaspoon vanilla extract
2 large ripe peaches, peeled, pitted, and diced
1/3 cup peach preserves
3 tablespoons sanding sugar
1/4 teaspoon ground cinnamon
Instructions
Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
Whisk together flour, salt, and baking soda in a medium bowl.
In a separate large bowl, cream the butter, granulated sugar, and brown sugar until light and airy.
Add the egg and vanilla extract to the butter mixture, beating until well incorporated.
Slowly fold in the flour mixture until just combined.
Gently fold in the fresh diced peaches and peach preserves.
Scoop dough onto prepared baking sheets.
Mix sanding sugar and cinnamon together and sprinkle over the tops of the cookie dough.
Bake for 13 minutes or until edges are golden.
Cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
Ensure peaches are finely diced to prevent excess moisture from making the dough too soft. Store in an airtight container at room temperature for up to 3 days. Can be frozen once cooled completely.
