Description

Elevate your weeknight dinner with these smoky chipotle chicken burgers. Featuring succulent, honey-chipotle glazed chicken thighs paired with the bright, crisp crunch of house-pickled fennel, this dish offers a sophisticated flavor profile. Easy to prepare and packed with bold, charred goodness, it is a guaranteed crowd-pleaser that brings a restaurant-quality experience straight to your kitchen table.

Ingredients

1 large fennel bulb, trimmed and finely sliced
3 tbsp apple cider vinegar (alcohol-free substitute for sherry vinegar)
2 tbsp caster sugar
1 tsp salt
480g chicken thigh fillets, trimmed
5 tbsp honey chipotle BBQ sauce
4 brioche burger buns, split
4 tbsp mayonnaise
4 tsp wholegrain mustard
1 head little gem lettuce, leaves separated
1 large tomato, sliced

Instructions

Place chicken thighs between baking parchment and bash gently with a meat tenderiser to ensure even thickness.
Toss the chicken in a bowl with the barbecue sauce and let marinate for 30 minutes.
Combine sliced fennel, vinegar, sugar, and salt in a bowl.
Let the fennel mixture sit for 30 minutes, stirring occasionally, then drain and squeeze out excess liquid.
Preheat your grill to high and arrange chicken on a foil-lined, oiled tray.
Grill for 7-8 minutes per side until blackened at the edges and cooked through.
Toast the brioche buns, spread mayonnaise and mustard on the bases.
Layer with lettuce, tomato, grilled chicken, and a generous heap of pickled fennel and serve immediately.

Notes

Pounding the chicken is crucial for even cooking and preventing dry edges. Keep a close watch during the final minutes of grilling if you prefer a darker, caramelized char.
