Ingredients

1 lb Smoked turkey kielbasa, sliced into half-inch rounds
3 medium Yukon gold potatoes, cubed
1 Green bell pepper, diced
1 Yellow onion, diced
2 cloves Garlic, minced
2 tbsp Extra virgin olive oil
1 tsp Smoked paprika
1/2 tsp Dried thyme
Salt and pepper to taste


Instructions

Slice the smoked turkey kielbasa into rounds and cube potatoes into uniform pieces.
Heat one tablespoon of olive oil in a large skillet over medium heat.
Add potatoes, salt, pepper, and smoked paprika to the skillet.
Cook potatoes for 10 minutes until golden and tender, then remove from the pan.
Add the remaining olive oil to the same skillet.
Sauté onions, bell peppers, and garlic for 5 minutes until soft.
Add the sliced turkey kielbasa to the skillet and cook until lightly browned.
