Ingredients
1 lb lean ground beef (90/10)
1/2 cup whole-wheat flour tortillas
1/2 cup shredded cheddar cheese
1/4 cup chopped fresh cilantro
1/2 cup chopped romaine lettuce
2 tbsp mayonnaise
1 tbsp Greek yogurt
1 tsp Dijon mustard
1/2 tsp smoked paprika
1/2 tsp garlic powder
0.5 limes, juiced
0.5 tomatoes, chopped
1 medium red onion, sliced
1 tbsp butter (for soft tortillas)
0.5 tsp salt
0.25 tsp black pepper
Instructions
Heat 1 tbsp butter in a cast-iron skillet over medium-high
Pattie the ground beef into 6 equal portions
Quickly smash each patty into thin discs (~0.25″ thick)
Cook 2 minutes per side until crispy and browned
Sprinkle salt and pepper on cooked patties
Place cheese slice on each patty during final minute
