Tender chicken, colorful bell peppers, and juicy onions bathed in a zesty Tex-Mex sauce, all cooked to perfection in a slow cooker. These flavorful fajitas are perfect for any dinner occasion.


Ingredients

1.5 pounds boneless, skinless chicken breasts
1 red bell pepper, sliced
1 green bell pepper, sliced
1 large yellow onion, sliced
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon chili powder
1/2 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon cayenne pepper (optional)
1/4 cup lime juice
4-6 flour or corn tortillas (for serving)
Fresh cilantro, sliced (optional garnish)
Lime wedges (optional garnish)


Instructions

Season chicken with cumin, chili powder, garlic powder, salt, and cayenne (if using)
In a large bowl, add chicken pieces and massage the seasonings to coat evenly
Place chicken in the bottom of a slow cooker
Add bell peppers and onions around the chicken
Drizzle with olive oil and lime juice
Cover and cook on low for 6 hours or high for 3-4 hours until chicken is fully cooked and vegetables are tender
Warm tortillas in a dry skillet or microwave
Serve chicken and vegetables in tortillas, garnished with cilantro and lime wedges

Notes

Use any color bell peppers you prefer
For extra moisture, add 1/4 cup water with the vegetables
Leftovers store well in the refrigerator for up to 4 days
