Ingredients
2 lbs boneless skinless chicken breasts
1 tsp salt
0.5 tsp black pepper
1 tsp Italian seasoning
3 cloves garlic, minced
10.5 oz condensed cream of chicken soup
0.5 cup low-sodium chicken broth
1 cup shredded mozzarella cheese, divided
0.5 cup shredded Parmesan cheese
0.5 tsp crushed red pepper flakes (optional)
1 tbsp olive oil
2 tbsp fresh parsley, chopped
Instructions
Pat the chicken breasts dry and season both sides with salt, pepper, and Italian seasoning.
Place the seasoned chicken in the slow cooker and drizzle with olive oil.
In a small bowl, mix the condensed cream of chicken soup, chicken broth, minced garlic, and red pepper flakes.
Pour the soup mixture over the chicken.
Cover and cook on low for 6 hours or high for 4 hours.
Once cooked, stir in half of the mozzarella and all of the Parmesan cheese into the sauce.
Top with the remaining mozzarella cheese and cover for 5 minutes until melted.
Garnish with fresh parsley and serve warm.
Notes
You can substitute chicken breasts with boneless chicken thighs for extra juiciness. If the sauce is too thin, you can whisk in a teaspoon of cornstarch mixed with cold water during the last 30 minutes of cooking. Store leftovers in an airtight container for up to 3 days.
