Ingredients

1 lb ground beef (85% lean)
4 medium russet potatoes, peeled and cubed
1 small onion, diced
2 cloves garlic, minced
1 cup tomato sauce
1/2 cup ketchup
1/4 cup apple cider vinegar
1 tsp Worcestershire sauce
1 tsp smoked paprika
1/2 tsp dried oregano
1 tsp salt
1/2 tsp black pepper
6 oz sharp cheddar cheese, shredded


Instructions

Preheat oven to 400°F (200°C)
In an oven-safe skillet, brown beef over medium heat until no pink remains
Add onions and garlic, sauté until softened
Stir in tomato sauce, ketchup, vinegar, Worcestershire, paprika, oregano, salt, and pepper
Cook 5 minutes until sauce thickens
Add potatoes to the skillet, toss to coat in sauce
Spread evenly, cover with lid or foil, and bake 25-30 minutes until potatoes are tender
Top with shredded cheese, return to oven 5 minutes until melted

Notes

For vegetarian option, substitute 1 lb cooked textured vegetable protein
