Description

A hassle-free, flavorful seafood feast with succulent shrimp, sweet corn, tender potatoes, and zesty sausage, all roasted together on a single pan in under 40 minutes. Perfect for quick weeknight dinners or relaxed gatherings.


Ingredients

12 large shrimp, peeled and deveined
6 medium red potatoes, halved
3 ears sweet corn, husked and cut into 1-inch pieces
10 halal chicken sausage links, halved
Olive oil for drizzling
2 tablespoons unsalted butter
3 cloves garlic, minced
2 tablespoons Old Bay seasoning
2 tablespoons chopped fresh parsley
1 tablespoon lemon juice
Salt to taste


Instructions

Preheat oven to 400°F (200°C). Line a large sheet pan with foil.
Arrange potatoes, corn, and sausages on the pan in a single layer.
In a small bowl, mix butter, garlic, Old Bay seasoning, and parsley. Drizzle olive oil over the pan, then evenly spread the garlic-butter sauce over all components.
Roast for 20 minutes. Add shrimp and return to oven for 8-10 minutes, until shrimp are pink and potatoes are tender.
Toss with lemon juice and additional salt to taste before serving.

Notes

Use halal or pork-free sausage to replace traditional sausage links
Adjust Old Bay seasoning to control spice level
Add peeled and deveined shrimp directly after roasting veggies for best texture
Fresh herbs like thyme or dill can substitute parsley if preferred
