Ingredients

1 lb beef sirloin tips, cut into bite-sized pieces
2 tbsp olive oil
1 onion, diced finely
2 cloves garlic, minced
8 oz mushrooms, sliced
1 cup beef broth
1 tbsp Worcestershire sauce
1 tbsp soy sauce
1 tsp Dijon mustard
1 tsp dried thyme
8 oz egg noodles
2 tbsp unsalted butter
Salt and pepper to taste


Instructions

Heat olive oil in a large skillet over medium-high heat.
Sear the beef sirloin tips until browned on all sides, then remove and set aside.
Add diced onion to the skillet and cook until softened, about 3-4 minutes.
Add minced garlic and sliced mushrooms, cooking until mushrooms are golden brown.
Return the beef to the skillet.
Add beef broth, Worcestershire sauce, soy sauce, Dijon mustard, and thyme.
Simmer the mixture until the gravy thickens to your preference.
While the beef simmers, cook egg noodles in a separate pot of boiling water according to package directions.
Drain the noodles and toss with 2 tablespoons of butter.
Serve the beef tips and gravy over the prepared buttery noodles and season with salt and pepper to taste.

Notes

Substitute dried rosemary for dried thyme if preferred. Use low-sodium beef broth to better control the final salt content. If the gravy is too thin, create a small slurry with cornstarch and water to thicken it further.
