Description

These Ritz Cracker Caramel Peanut Clusters combine a buttery cracker base with gooey caramel, creamy peanut butter, rich chocolate, and crunchy peanuts. No baking required! Perfect for any occasion and a guaranteed crowd-pleaser.


Ingredients

2 sleeves (approx. 36) Ritz crackers or similar buttery crackers
1/2 cup (128g) caramel bits or salted caramel spread (store-bought or homemade)
1/4 cup (60g) creamy unsalted peanut butter
1/4 cup (50g) semi-sweet chocolate chips
1/4 cup (25g) chopped roasted peanuts
1 tablespoon vegetable oil (optional, for smoother caramel mixture)


Instructions

In a microwave-safe bowl, melt the caramel bits and peanut butter together using 30-second intervals on high, stirring between each until smooth. If the mixture is too thick, add 1 tablespoon of vegetable oil and mix until well combined.
Take one Ritz cracker and dip it into the caramel mixture, coating both sides.
Dip the coated cracker into the chopped peanuts to cover completely.
Place the cracker cluster on a plate lined with parchment paper or wax paper.
Repeat with the remaining Ritz crackers.
In a microwave-safe bowl, melt the chocolate chips for 1 minute, stirring until smooth.
Dip the top half of each cluster into the melted chocolate. Place back on the lined plate.
Transfer the plate to the refrigerator to chill and set for about 5 minutes before serving.
Store any leftovers in an airtight container in the refrigerator for up to 5 days.

Notes

You can use dairy-free alternatives like vegan caramel and peanut butter to make this recipe vegan.
Feel free to substitute the chocolate with dark or milk chocolate, or even drizzle it for more flair.
For a quicker chocolate coating option, use a small cookie scoop to drop chocolate over the clusters and spread gently with a knife.
