Description

A vibrant, sweet-spicy salad blending juicy pineapple, crisp cucumber, zesty lime, and chili seasoning for an addictively refreshing dish perfect for summer meals.


Ingredients

3 cups (450g) fresh golden pineapple, cut into 1-inch cubes
1 large (300g) English cucumber, sliced into 1/2-inch half-moons
1 jalapeño pepper, finely chopped (remove seeds for milder flavor)
1/4 cup red onion, thinly sliced
2 tablespoons chopped fresh cilantro
1/4 cup lime juice (about 2 limes)
2 tablespoons honey
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 teaspoon black pepper


Instructions

1. In a large bowl, combine pineapple, cucumber, jalapeño, and red onion.
2. In a separate small bowl, whisk together lime juice, honey, chili powder, cumin, salt, and pepper.
3. Pour the dressing over the fruit-vegetable mixture and stir until well coated.
4. Refrigerate for 15-20 minutes to allow flavors to meld.
5. Before serving, garnish with fresh cilantro.

Notes

Use canned pineapple only if fresh is unavailable (drain well before using). Serve with grilled chicken, fish, or over a bed of greens for a more filling dish. Adjust spice level by using half a jalapeño or adding a pinch of cayenne.
