Description

Ingredients

2 medium zucchini, sliced into 1/4 to 1/2-inch rounds

1 tbsp extra virgin olive oil

Salt, to taste

Black pepper, to taste

1 cup freshly grated Parmesan cheese


Instructions

1. Preheat oven to 450°F (230°C).

2. Arrange zucchini on a baking sheet.

3. Drizzle with olive oil.

4. Season with salt and pepper.

5. Top with Parmesan.

6. Bake 10 minutes.

7. Broil 2–3 minutes until golden.

8. Serve immediately.

Notes

Pat zucchini dry before roasting for extra crispiness.

Freshly grated Parmesan melts best.

Store leftovers in the refrigerator for up to 3 days.
