Ingredients

4 cups watermelon puree
2 cups coconut yogurt (unsweetened)
1 cup kiwi puree
4 fresh basil leaves (optional, for garnish)


Instructions

Prepare popsicle molds by securing sticks in place.
Pour 1/2 cup watermelon puree into each mold.
Freeze for 1 hour until slightly firm.
Add 1/4 cup coconut yogurt layer over watermelon.
Top with kiwi puree in each mold.
Freeze for 2 additional hours until fully set.
Unmold and store in an airtight container.

Notes

Use fully ripe watermelon for optimal sweetness
Layer in reverse order (kiwi first, then yogurt, then watermelon) for a gradient effect
