3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
2.5 Tablespoons pumpkin pie spice
1 cup granulated sugar
1 cup dark brown sugar
1 cup vegetable oil
3 cups canned pumpkin puree, chilled
2 large eggs
1 teaspoon vanilla extract
3 cups confectioners’ sugar
0.5 cup unsalted butter, softened
8 oz cream cheese, softened
3 Tablespoons maple syrup
1 teaspoon vanilla extract


Instructions

Preheat your oven to 350 degrees F and line two baking sheets with parchment paper.
In a large bowl, whisk together the flour, salt, baking soda, baking powder, and pumpkin pie spice.
In a separate large bowl, combine the granulated sugar, dark brown sugar, vegetable oil, chilled pumpkin puree, eggs, and vanilla extract until smooth.
Gradually fold the dry ingredients into the wet ingredients until just combined.
Drop rounded tablespoons of batter onto the prepared baking sheets, spacing them about 2 inches apart.
Bake for 12 minutes or until the cookies spring back when touched.
Allow the cookies to cool completely on the baking sheet before removing.
To make the filling, beat the softened butter and cream cheese together until smooth and creamy.
Slowly add the confectioners’ sugar, maple syrup, and vanilla extract, beating until light and fluffy.
Pipe or spread the filling onto the flat side of half the cookies and top with the remaining halves to form sandwiches.
