Ingredients
15 oz pumpkin puree
1 cup granulated sugar
1/2 cup light brown sugar
1/2 cup vegetable oil
2 large eggs
1/2 tsp vanilla extract
1/2 cup milk
1 3/4 cups all-purpose flour
1 tsp baking soda
1 tsp cinnamon
3/4 tsp pumpkin pie spice
1/2 tsp kosher salt
Streusel: 1/4 cup melted butter, 1/3 cup flour, 1/4 cup brown sugar, 1/4 tsp pumpkin pie spice
Glaze: 1/2 cup powdered sugar, 1 tbsp maple syrup, 1/2 tsp milk
Instructions
Preheat oven to 325F and grease a 9×5 loaf pan.
Combine streusel ingredients to form coarse crumbs and refrigerate.
Whisk flour, baking soda, salt, cinnamon, and pumpkin pie spice in a large bowl.
In another bowl, beat pumpkin puree, sugars, oil, eggs, vanilla, and milk until smooth.
Fold the dry ingredients into the wet mixture until just combined.
Pour batter into the prepared loaf pan.
Sprinkle the chilled streusel evenly over the top.
Bake for 80 minutes or until a tester comes out clean.
Cool completely before drizzling with the whisked maple glaze.
Notes
Ensure your pumpkin puree is 100% pure pumpkin and not pie filling. If the streusel browns too quickly, cover the pan loosely with foil during the last 20 minutes of baking. Store in an airtight container at room temperature for up to 3 days.
