Ingredients
3 1/2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/4 teaspoon cinnamon
1/4 teaspoon salt
1 1/3 cups buttermilk
2 large eggs
1/4 cup vegetable oil
2/3 cup brown sugar
1 teaspoon vanilla extract
2 cups diced fresh peaches
1/2 cup rolled oats
Instructions
Preheat your oven to 350 degrees F and grease 6 mini loaf pans or 3 regular loaf pans.
In a large bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt.
In a separate bowl, combine the buttermilk, eggs, vegetable oil, brown sugar, and vanilla extract until smooth.
Gradually stir the wet ingredients into the dry mixture until just combined.
Gently fold in the diced fresh peaches.
Divide the batter evenly into the prepared loaf pans.
Sprinkle the rolled oats over the top of each loaf for the streusel effect.
Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
You can substitute 1 cup of the flour with whole wheat flour for extra texture. If you do not have buttermilk, Greek yogurt is a great alternative. Frozen peaches may be used if they are thawed and drained thoroughly first. Store leftovers in an airtight container for best results the next day.
