Ingredients
3 large fresh peaches, chopped
1/4 cup all-purpose flour (for tossing peaches)
2 1/2 cups all-purpose flour
1 tsp baking powder
1/2 tsp baking soda
1 1/2 tsp cinnamon
1/2 tsp salt
1/4 tsp nutmeg
1/4 tsp cloves
3/4 cup buttermilk, room temperature
1 tbsp vanilla extract
1 1/4 cups unsalted butter, softened
1 1/4 cups light brown sugar, packed
1 cup granulated sugar
4 large eggs, room temperature
Instructions
Preheat your oven to 350°F (175°C) and grease a standard pound cake or bundt pan.
In a small bowl, toss the chopped peaches with 1/4 cup of flour to prevent them from sinking during baking.
In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, nutmeg, and cloves.
In a large bowl, cream the softened butter with the brown and granulated sugars until light and fluffy.
Add the eggs one at a time, beating well after each addition, then stir in the vanilla extract.
Gradually add the flour mixture alternating with the buttermilk, mixing until just combined.
Fold in the floured peaches gently.
Pour the batter into the prepared pan and smooth the top.
Bake for 80 minutes or until a skewer inserted into the center comes out clean.
Allow the cake to cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
Notes
Ensure all dairy and eggs are at room temperature for the best emulsification. This cake stores exceptionally well and tastes even better the next day after the moisture from the peaches has distributed into the crumb.
