Ingredients
2 cups all-purpose flour
1/2 cup granulated sugar
1/4 cup brown sugar
2 tsp baking powder
1/2 tsp salt
1 tsp ground cinnamon
3/4 cup whole milk
1/2 cup vegetable oil
2 large eggs, room temperature
1 tsp vanilla extract
1 1/2 cups diced peaches
1/2 cup powdered sugar
1 tbsp milk
Instructions
Preheat your oven to 375°F and grease a 12-cup muffin tin.
In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, salt, and cinnamon.
In a separate bowl, whisk the milk, vegetable oil, eggs, and vanilla extract until well combined.
Make a well in the center of the dry ingredients and pour in the wet mixture; stir gently until just combined.
Fold in the diced peaches being careful not to overmix the batter.
Divide the batter evenly among the muffin cups.
Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack.
Whisk together the powdered sugar and 1 tablespoon of milk to create a glaze, and drizzle over the cooled muffins.
Notes
Ensure the baking powder is fresh for the best rise; use whole milk for a richer texture; if using canned peaches, drain them very well to avoid excess moisture; storage is best in an airtight container at room temperature for up to 3 days.
