Description

Indulge in a delightful fusion of creamy New York-style cheesecake and the warm, rustic comfort of a traditional peach cobbler. This exquisite dessert features a crunchy graham cracker crust, a velvety smooth cheesecake base layered with sweet peach essence, and a signature oat crumble topping. It is the perfect crowd-pleasing centerpiece for family gatherings, holiday celebrations, or a cozy Sunday dinner, offering a harmonious contrast of textures that will satisfy even the most discerning dessert lover.

Ingredients

1.5 cups graham cracker crumbs
0.5 cups granulated sugar
0.5 cups unsalted butter, melted
16 oz cream cheese, softened
1 cup granulated sugar
1 tsp vanilla extract
3 large eggs, room temperature
1 cup fresh peaches, chopped small
1 cup all-purpose flour
0.5 cups packed brown sugar
0.5 cups old fashioned oats

Instructions

Preheat your oven to 350 degrees Fahrenheit.
Combine graham cracker crumbs, 0.5 cups sugar, and melted butter in a bowl.
Press the crumb mixture firmly into the bottom of a springform pan.
In a separate bowl, beat the softened cream cheese and 1 cup sugar until smooth.
Add vanilla extract and eggs to the cream cheese mixture, beating until combined.
Stir in the chopped peaches and pour the mixture over the prepared crust.
In a small bowl, mix the flour, brown sugar, and oats to create the cobbler topping, then sprinkle over the cheesecake layer.
Bake for 60 minutes or until the center is set.
Allow to cool completely and chill in the refrigerator for at least 4 hours before serving.

Notes

You can use canned peaches if fresh are out of season, just ensure they are well-drained. The cheesecake tastes even better if prepared a day in advance to allow flavors to meld. Keep refrigerated for up to 5 days.
