Ingredients

4 large ripe peaches (peeled and diced)
3 1/2 cups cake flour (spoon and level)
5 cups salted butter (split for cake, streusel, and frosting)
3/4 cup full fat sour cream (room temperature)
5 ounces cream cheese (softened)
5 1/3 cups powdered sugar
2 cups granulated sugar
4 large eggs
1 tablespoon vanilla extract
1 cup whole milk
1/2 cup vegetable oil
1 tablespoon ground cinnamon
1/4 cup cornstarch
1/2 teaspoon salt


Instructions

Prepare the browned butter by melting in a pan over medium heat until golden amber; chill until firm.
Prepare the peach filling by cooking diced peaches with sugar and spices for 6 minutes, thicken with a cornstarch slurry, then stir in vanilla and cool in the fridge.
Preheat oven to 350°F and prepare the streusel by baking butter, sugar, and cinnamon mixture until golden, then set aside.
Grease and line three 8-inch cake pans with parchment paper.
Whisk dry ingredients in a bowl.
Cream butter, oil, and sugar together, then beat in eggs, sour cream, and vanilla.
Gradually fold in the dry ingredients and milk until smooth.
Divide batter into pans and bake 19-25 minutes; cool completely.
Whip the chilled browned butter with softened cream cheese and powdered sugar until smooth.
Assemble by layering cake, peach filling, and streusel, finishing with a generous coating of brown butter frosting.

Notes

Ensure butter, eggs, and sour cream are at room temperature before starting the cake batter to achieve the best crumb. The brown butter frosting can be made in advance and kept in the refrigerator, but it will need to be whipped again to regain its fluffy consistency.
