Ingredients
1 to 2 romaine lettuce hearts
1 cup grated parmesan cheese
1/4 cup olive oil
2 tablespoons fresh lemon juice
1 small red onion, thinly sliced
1 small garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/4 cup dried cranberries (optional)
1/4 cup toasted sunflower seeds or chopped walnuts (optional)
Instructions
Chop romaine lettuce into bite-sized pieces
In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper
Fold dressing into the salad with romaine leaves
Top with grated parmesan, red onion, and optional dried cranberries/seeds
