Ingredients
1 pound zucchini, cut into 1/2-inch sticks
1/3 cup all-purpose flour
1/2 tsp garlic powder
1/4 tsp salt
1 large egg, beaten
3/4 cup panko breadcrumbs
1/3 cup parmesan cheese, freshly grated
1 tbsp Italian seasoning
1/2 tsp garlic powder
1/4 tsp salt
Black pepper to taste
Instructions
Preheat your oven to 425 degrees Fahrenheit and grease a large baking sheet.
In a shallow dish, combine flour, 1/2 tsp garlic powder, and 1/4 tsp salt.
In a second dish, whisk the egg until smooth.
In a third dish, combine panko, parmesan, Italian seasoning, additional 1/2 tsp garlic powder, 1/4 tsp salt, and pepper.
Dip zucchini sticks into the flour mixture, shaking off excess.
Dip into the egg mixture then coat thoroughly with the breadcrumb mixture.
Place on the baking sheet in a single layer.
Bake for 20 minutes until golden brown and crispy.
Notes
Ensure the zucchini is dry before coating to maintain crispiness. Serve immediately with your favorite dipping sauce like marinara or ranch. Store leftovers in an airtight container, though they are best served fresh.
