Ingredients
2 cups zucchini (grated and excess moisture removed)
2 cups all-purpose flour
¾ cup granulated sugar
¼ cup packed brown sugar
1 teaspoon baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
½ teaspoon ground nutmeg
2 large eggs
¼ cup vegetable oil
1 cup (240ml) buttermilk
Instructions
Preheat oven to 350°F (175°C)
Grease a 9×5-inch loaf pan
Combine zucchini, flour, sugars, baking soda, salt, cinnamon, and nutmeg in a large bowl
Add eggs and mix until well combined
Stir in vegetable oil and buttermilk
Pour batter into prepared pan
Bake for 60 minutes or until a toothpick inserted near center comes out clean
Notes
For best results, use zucchini grated the same day
Buttermilk can be substituted with plain yogurt or non-dairy alternative (add 1 tablespoon lemon juice or vinegar)
Store in an airtight container at room temperature for up to 3 days
