Ingredients

6 cube steaks (well-tenderized)
2 cups all-purpose flour
3 tbsp seasoning salt
1 pinch dried thyme
1 pinch dried oregano
1/2 tsp smoked paprika
3 tsp baking powder
1 1/4 cups whole milk
4 large eggs
2 tbsp Worcestershire sauce
1 dash hot sauce
Canola oil (for frying)
6 tbsp salted butter
2 tsp freshly ground black pepper


Instructions

Whisk flour, seasoning salt, baking powder, thyme, oregano, and paprika in a large bowl.
In a separate bowl, whisk milk, eggs, Worcestershire sauce, and hot sauce.
Dip each steak into the egg mixture until fully coated.
Coat the steak thoroughly in the flour mixture, then dip back into the egg and once more into the flour.
Heat canola oil in a large skillet over medium-high heat until shimmering.
Fry steaks for 3-4 minutes per side until golden brown and crispy; set aside on a wire rack.
Discard all but 2 tbsp of oil from the skillet, then add butter for the gravy.
Whisk in 1/4 cup reserved flour to the butter, cooking for 1 minute to remove raw flour taste.
Slowly whisk in milk or broth while scraping the brown bits from the bottom of the skillet.
Continue cooking until the gravy thickens to your preference, then stir in fresh black pepper.
Spoon the warm gravy over the fried steaks before serving.

Notes

Ensure cube steaks are well-tenderized for the best texture. If the gravy becomes too thick, whisk in a splash of warm milk to reach the desired consistency.
