Ingredients
1 1/2 cups graham cracker crumbs
1/3 cup melted butter
2 8-ounce packages softened cream cheese
1/2 cup granulated sugar
1/2 cup sweetened lemonade (store-bought or homemade)
1 teaspoon cornstarch
1 egg white
1/8 teaspoon salt
Zest from 1 lemon
Instructions
In a small bowl, mix graham cracker crumbs with melted butter until combined.
Press mixture into an 8-inch pie dish to form a crust. Chill for 10 minutes.
In a large bowl, blend cream cheese until smooth.
Add sugar, cornstarch, egg white, salt, and lemon zest. Mix thoroughly.
Gradually stir in lemonade until fully incorporated.
Spread filling over the chilled crust.
Chill for 4 hours or until firm.
Notes
For a smoother texture, blend the filling in a food processor.
Top with additional lemon zest or fresh mint before serving.
Store in an airtight container in the refrigerator for up to 3 days.
