Ingredients
1 head cauliflower, cut into florets
1 cup mushrooms, sliced
1/2 cup cottage cheese
1/2 cup shredded cheddar cheese
1/4 cup milk
1 small onion, diced
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 tablespoon olive oil
1 teaspoon garlic powder
Salt and pepper to taste
Instructions
Preheat oven to 375°F (190°C)
Toss cauliflower florets and mushrooms with olive oil, salt, and pepper
Roast for 15-20 minutes until tender
In a separate pan, sauté onion and garlic until soft
Stir in flour to make a roux, gradually add milk and cottage cheese
Cook until slightly thickened, then stir in cheddar cheese until melted
Mix roasted vegetables into the creamy sauce
