Ingredients
4 slices sturdy white bread
1 cup shredded rotisserie chicken
4 slices Gruyère cheese
2 large eggs
1 tbsp yellow mustard
1 tbsp mayonnaise
2 tbsp unsalted butter
1 pinch salt
1 pinch black pepper
Instructions
In a shallow dish, whisk together the two eggs with a pinch of salt and pepper until well combined.
Lay out the four slices of bread and spread a thin layer of mustard and mayonnaise on one side of each slice.
Assemble two sandwiches by layering the rotisserie chicken and Gruyère cheese between the slices of bread.
Heat a skillet over medium heat and melt the butter.
Quickly dip each assembled sandwich into the egg mixture, ensuring the exterior is lightly coated but not soaked.
Place the sandwiches into the hot skillet and cook for 3 minutes per side, or until the bread is golden-brown and the cheese is fully melted.
Remove from the skillet, slice diagonally, and serve immediately while warm.
Notes
Ensure your bread is room temperature to allow for better absorption of the egg mixture. For an extra crispy crust, you can lightly dust the outside of the dipped sandwich with a tiny bit of breadcrumbs if desired. Keep the heat at medium to ensure the cheese melts through before the bread burns.
